IN SEARCH OF THE MEAT DESSERT
of late.. I've been considering the unspoken "rules" or assumptions we have about food.. the basic rules we consider the logic of food.. and lately I've been wondering upon ways in which this logic could be twisted, broken and bent.. I mean, sure.. I love food the way it is.. don't get me wrong.. but, being a creative idiot.. I get occassionally bored of it.. and wonder about ways to make it more interesting.. y'know.. like, from an artistic perspective..
consider MEAT for example - we can potentially add it to just about any dish we wanted to.. anything from salads, soups, pastas, breads, cheeses, curries, stews, jerkies, pies, pizzas, potato chips and sandwiches.. everything from appertisers to main courses.. pretty much everything you can consider that could be done to food we can throw meat into.. everything that is.. except for ONE obvious glaring ommision.. the MEAT DESSERT!
now granted.. I don't mean we should throw a few sausages in with a bowl of icecream and some chocolate syrup and go crazy.. that's just plain irresponsible.. NOOO.. I mean, a REAL meat dessert.. just think.. with the right chef.. with the right culinary genius.. anything is possible.. we've already got people eating chocolate easter bunnies.. cookies in the shape of animals.. chocolate moose (oh no.. wait.. wrong spelling hahaha!) and pretty much any meat works with a honey glaze.. so why not a carnivorous dessert of some kind? it can't be TOO crazy an idea right? riiiight?
just think of some of the sweeter meats.. your crab meat.. lobster.. prawns.. fish.. maybe chicken and pork.. the white meats.. they're not TOO far removed from dessert potential.. and consider they've already done shit halfway there with main courses.. like honey glazes.. plum sauces.. chucking in pineapple and saltana's and crap.. if only we pushed it into real dessert territory.. you could have frozen cubes of crab mixed with a cheese and fruit platter? that's not too risky is it? or why not caramel duck stuffed with coffee cake? honeycomb and pork? wafer thin slices of rare cooked steak with shavings of dark chocolate? am I nuts? or could a chef make that work!?
I mean.. with a stretch of the imagination.. I can't see why we CAN'T do a meat dessert.. I thought it'd be pure genius to try it.. and yet, when I once mentioned this concept to my brother (who's just so happens to be a chef) to see if he would experiment with this idea.. he just looked at me all horrified like I was considering sexually violating small puppies or burning down orphanages or shit..
hmmmm.. maybe I'm too far ahead of my time here..
